Are you looking for a creative way to cook your beef ribs? Then look no further, this recipe by Les Canada of Que The Smoke BBQ will definitely please your taste buds. This recipe includes Willow Seasonings High Elevation SPG Dry Rub and Willow’s Sweet Heat. The cook time is about 5 to 6 hours, but will be worth every minute of it.

Heat smoker to 275 F (Les used a combination of Cherry and Mesquite wood for this smoke)

Trim any excess fat from the ribs and remove any silver skin from the ribs

Inject the ribs with Wagyu beef tallow

Rub the ribs with Worcestershire sauce, this will act as a binder for the seasonings

Season the ribs using Willow Seasonings High Elevation SPG Dry Rub

Place ribs into the smoker (thick side of ribs closest to heat source)

While the ribs are cooking make a mixture of liquid wagyu tallow, Willow’s Sweet Heat BBQ Seasoning, and Melinda Foods Roasted Garlic Pepper Sauce. Put this mixture in a sauce bottle and not a spritzing bottle

After 3 hours of cooking check the ribs to see if the run is set. If rub is set baste the ribs with the tallow mix.

Cook an additional two hours and then baste again with the tallow mixture. At this point probe the meat to check the internal temperature, smoke until internal temperature reaches 200 degrees and then begin probing for tenderness. Once the ribs have reached your desired tenderness remove from the smoker and wrap with butchers paper and allow the ribs to rest for 45 minutes to 1 hour.

Unwrap, slice, and serve.
