Reverse Seared Tri-Tip Ingredients2-to-3-pound Tri-TipFeisty Lime Fajita SeasoningHigh Elevation SPGDirections1. Preheat your grill or smoker to 225 degrees Fahrenheit2. While your grill or smoker is warming up rinse the Tri-Tip and pat dry with paper towels3. Lightly coat the Tri-Tip with olive oil to act as a binder (flavored olive oil can be used to add a twist)4. Coat one side of the Tri-Tip with the High Elevation SPG, let sit until the meat begins to sweat and then apply a layer of Feisty Lime Fajita Seasoning and let sit 5-10 minutes. Flip over and repeat.5. Once the grill or smoker is warmed up place the Tri-Tip directly on the grates of the grill or smoker, insert a temperature probe into the meat if you choose to use one.6. Grill or smoke the meat until it reaches an internal temperature of 128 degrees Fahrenheit. Once the internal temperature is at the desire temperature, remove the meat and tent with foil.7. Increase the temperature of your grill or smoker to a minimum of 500 degrees Fahrenheit.8. Once the grill or smoker reaches the desired temperature sear the Tri-Tip for 3 to 4 minutes per side.9. Remove from grill or smoker and let rest for 5 to 10 minutes before slicing. Make sure that you pay close attention to the grain of the meat while slicing, it changes direction. Make sure that you cut against the grain to provide a more tender piece of meat.10. Serve with sides of your choice and ENJOY!!!
